Protein Scores of Korean Food by Regions

Abstract
This study was on the basis of National Survey which was conducted on 952 households comprising made 6,218 persons (Srtratified multistage sampling) in urban and rural Korea, during the period from 29th of July to 15th of August, 1969. As a result, a conclusion has reached as summerising as follows:
(1) Food intake
It is found that the cereals & their products intake was comparatively higher than that of any other food, where as in mountainous potatoes intake marked 4 times of average amount.
Secondary, vegetable intake (fresh or processed) was second to the above in amount : Where as in fishery, intake of fresh vegetable met only the half to the average degree.
(2) Protein intake
Protein intake mostly depended on the vegetable protein (90.8%), meanwhile extremely small portion of protein could be taken from the animal foods (9.2%). Proteins are highly complex substences that are universally present in living organisms. They are of great nutritional importance, have numerous industrial uses and are directly involved in the chemical processes necessary for the maintenance of life.
Green plant & many microorganisms do not require protein fond. For man and all animals, however, protein is an essential constituent of the diet.
(3) Protein score
The nutritive value of protein depends on the types of amino acid formulated. Percentage of amino acid pattern (Protein score) in different district of Korea was as follows :
a) In city, Tryptophan was the lowest 74.4, Methionine was the next (89.6) : and Phenylalaine was highest at 167.8.
b) In agriculture, Tryptophan was also the lowest at 77.7, Lysine was the next(85.9) : and Phenylalaine was the highest at 164.5.
c) In fishery, Lysine was the lowest at 84.1, Methionine was the next (94.4) ; and Phenylalanine was also the highest at 161.1.
d) In mountainous, Threonine was the lowest at 67.2, Tryptohan was the next (90.0) ; and Phenylalanine was the highest at 198.9.
e) In mining, Tryptophan was the lowest at 70.1, Lysine was the next(81.5); and Phenylalnine, as expected, was the highest at 175.0.
f) In conclution, average protein score of urban and rural Korea came to be found that Tryptophan was the lowest at 76.7, Lysine was the next at 88.2 and Phenylalanine was the highest at 164.4.
Phenylalanine showed the highest protein score, in city, agriculture, fishery, mountainous, and mining ; the other hand Tryptophan and Lysine showed the lowest in protein score.
Protein(Amino acid) attained rice and its products was poor in quality, especially there is a deficiency in Tryptophan and Lysine.
Chemical score of Korean food (Average amino acid intake per person per day) showed Table 6. Net Dietary protein calories percent per person per day by regions showed Table 7.
Therefore, there is great necessity of invation of food life, development of new protein food (especially animal protein), Food richment, and continuous nutrition education.
